Each of our sugars is individually sourced from specialists around the world for their unique properties and paired with complimentary ingredients to deliver the unique flavour profiles of our confections.

We cut no corners with our ingredients, and source only the very finest:

  • Single batch churned cream from grass-fed cows in Western Victoria
  • Pure coconut cream harvested from the finest grade hand-picked coconuts
  • Hand-kneaded butter made from single batch churned cream 
  • Unrefined pink salt from the saline aquifers of the Murray Darling Basin
  • Natural native Australian ingredients
  • Raw honey from the King Valley in Victoria
  • Finest grade Sicilian Lemon and South American Passionfruit.
  • Highest grade nuts, seeds and spices
   

    Each of our sugars is individually sourced from specialists around the world for their unique properties:

    • Organic Rapadura Sugar from Sri Lanka, unrefined, it retains all its natural molasses and nutrients, resulting in a rich caramel taste and deep brown colour.
    • Golden Caster Sugar from Mauritius is minimally refined, partially retaining its molasses, adding a delicate and subtle buttery caramel undertone
    • Organic Gula Melaka from Indonesia is made from the young flower buds of the coconut palm to give off a delicate toffee-like note
    • Organic Superfine Caster Sugar from Brazil, has a smaller crystal structure is fast-dissolving and its neutral taste palate makes it a versatile accompaniment for subtler ingredients.
    • Pearl Sugar from Belgium provides a beautiful crunch in contrast to the smooth texture of the caramel
    • Snow Sugar from Italy, when blended with flavours creates the perfect aromatic dust to finish
